From Russia with libations: Dirty Martini


"This is a Martini for olive lovers. It can be served on the rocks, or chilled."

Ingredients

  • 6 fluid ounces vodka
  • 1 dash dry vermouth
  • 1 fluid ounce brine from olive jar
  • 4 stuffed green olives

Directions

  1. In a mixing glass, combine vodka, dry vermouth, brine and olives. Pour into a glass over ice. Either drink on the rocks, or strain into a chilled cocktail glass

Low-Sugar Living : Sugarless Applesauce Cake

"A good cake for diabetics."


Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 1 1/2 cups unsweetened applesauce
  • 3/4 cup brown sugar twin
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup raisins

Directions

  1. Preheat oven to 350 degrees F (175 degrees C). Spray an 8x4 inch loaf pan with cooking spray.
  2. Sift together flour, baking powder, baking soda, cinnamon, nutmeg and salt. Set aside.
  3. Beat the eggs until light and add sugar twin. Add applesauce and vanilla.
  4. Add flour mixture and beat until smooth. Fold in raisins.
  5. Pour batter into loaf pan. Bake at 350 degrees F (175 degrees C) for about an hour, or until a toothpick inserted into cake comes out clean.

Gluten-Free Goodness: Avocado Tacos

Ingredients

  • 3 avocados - peeled, pitted, and mashed
  • 1/4 cup onions, diced
  • 1/4 teaspoon garlic salt
  • 12 (6 inch) corn tortillas
  • 1 bunch fresh cilantro leaves, finely chopped
  • jalapeno pepper sauce, to taste

  • Directions

    1. Preheat oven to 325 degrees F (165 degrees C).
    2. In a medium bowl, mix avocados, onions, and garlic salt.
    3. Arrange corn tortillas in a single layer on a large baking sheet, and place in the preheated oven 2 to 5 minutes, until heated through.
    4. Spread tortillas with the avocado mixture. Garnish with cilantro and sprinkle with jalapeno pepper sauce.

Beer Lime Grilled Chicken

Original Recipe Yield 4 servings

Ingredients

  • 1 lime, juiced
  • 1 (12 fluid ounce) can light colored beer
  • 1 teaspoon honey
  • 2 cloves garlic, minced
  • 2 tablespoons chopped fresh cilantro
  • Salt and pepper
  • 4 skinless, boneless chicken breast halves
  • Directions

    1. In a bowl, mix the lime juice, beer, honey, garlic, cilantro, and salt and pepper until the honey dissolves. Pour the mixture over the chicken, cover and marinate for 30 minutes.
    2. Preheat an outdoor grill for medium heat and lightly oil grate.
    3. Remove chicken from marinade and shake off excess; discard remaining marinade. Grill chicken until tender and juices run clear, about 7 minutes per side.

Double Almond Chocolate Chip Cookies (Gluten-free)


Ingredients

  • 2 1/2 cups almond flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1/2 cup grapeseed oil
  • 1/2 cup agave nectar
  • 1 tablespoon vanilla
  • 1/2 cup dark chocolate chips
  • 1/2 cup sliced almonds

Directions

  1. In a large bowl, combine almond flour, salt and baking soda. In a medium bowl combine grapeseed oil, agave and vanilla. Stir wet ingredients into the almond flour mixture until thoroughly combined. Fold in chocolate chips and almond slices.
  2. Spoon dough 1 heaping tablespoon at a time onto a parchment lined baking sheet, pressing down with palm of your hand to flatten. Bake in a 350 degree F oven for 7 to 10 minutes, until lightly golden. Cool cookies on the baking sheets for 20 minutes, then serve.
